My favorite chopped mediterranean salad recipe.
Making healthy food shouldn’t be difficult. Sometimes our healthy eating habits are impacted by the prep time it takes to make our meals. Whenever I find something that’s super quick and easy, I love to share!. Recently, I have been enjoying this chopped mediterranean salad from Tasty. It’s fresh, fast, flavorful, and also helps fuel your body for the day. Nothing feels better than knowing you’re putting good into your body, and this is the easiest way to make sure your veggie intake is up to par. Bonus: The kiddos love it too.
What you’ll need: (serves 4.):
2 cucumbers
4 tomatoes
1 red onion
1/2 cup of feta cheese
2 tablespoons of olive oil
2 tablespoons of red wine vinegar
salt (to taste)
black pepper (to taste)
1 tablespoon lemon juice
1 cup of kalamata olives
Prep time: (less than 30 min):
Peel the cucumbers. Cut into discs, and then quarter the discs. Place in a large salad bowl.
Cut tomatoes into quarters, lengthwise, and then rotate and cut into large chunks. Add to the salad bowl.
Cut the red onion in half, removing the skin, stem, and bottom. Thinly slice and add to the bowl.
Add the feta cheese, olive oil, red wine vinegar, salt, pepper, lemon juice, and olives to the salad bowl and toss gently.
