A Friday post + a delightfully simple recipe.


Hi friends! Another week, another weekend! Today, I am going to share a recipe I tried out of Everyday Food. Their recipes never fail me {except for one - don't try the lemony pasta with goat cheese and spinach} and it requires one main ingredient: pumpkin!

Did you know that one 1/2 cup of pumpkin has a mere 42 calories and provides a full serving of veggies? It's also 14% of your daily quota for fiber and has immunity-boosting vitamin A, C and potassium. Super food, indeed.

Pumpkin Soup:
  • 3 cans of pumpkin puree
  • 8 cups of water
  • 8 cubes of chicken broth
  • 1/4 teaspoon of cumin
  • 1 teaspoon of red pepper flakes or cayenne pepper
  • 4 tablespoons of brown sugar
  • fresh cilantro leaves for garnish
Heat chicken broth to a boil. Add in 3 cans of pumpkin puree as well as all spices. Simmer for an hour. Serve and top with cilantro. Delish. {next time I plan on adding a dollop of creme fraiche}
