Hi all, Jenny here from Jenny in Ohio. I am here today to guest post for Johanna while she's with her bebe. Congrats Johanna and welcome to the world, Olivia!

I got a food processor last Christmas, and was super pumped to make hummus. It's so yummy with veggies and chips!

However, the price of tahini, a small but vital ingredient, was a huge turn-off for me, so I put it off. Have you ever priced tahini? $7 for a can? I am too much of a cheapskate for that!

So instead, I came up with this.

It's Guacamole Hummus, and it's yummy! It combines two of my favorite things- avocado and chickpeas.

Here's the recipe:
I halved everything, because my food processor is small, but it will easily double.

  • 1/2 can chickpeas, rinsed and drained
  • 1/2 avocado
  • 1/2 clove garlic
  • handful fresh cilantro
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 1 tablespoon lemon juice
  • salt & pepper to taste

Process the first four ingredients. Add olive oil, water and lemon juice until smooth. You made need to add more than listed to make smooth. Add salt and pepper to taste. Serve with tortilla chips or vegetables.

Enjoy!
