Summer salad recipe

Bear with me on the photo but I had to share this recipe before Fall arrives. I made it this week and forgot just how much I adore this sweet, colorful and easy to make salad. A friend shared it with me year's ago. It's so easy I don't even have a recipe card so feel free to doctor it up as you like.

Summer salad:
  • 3 ears of yellow corn
  • 1 small carton of cherry tomatoes
  • 1/2 medium red onion
  • 1/2 block of manchego cheese
  • 1 tablespoon of white vinegar
  • 2 tablespoons of olive oil
  • Pinch of black peppercorn
  • Pinch of sea salt {ok, I use two pinches}
Take your best knife and your ears of corn and slice off the corn kernels vertically. {canned corn could work, too but I prefer fresh corn} Throw in a bowl with olive oil, vinegar, pepper and salt. This receipe tastes best when ingredients can marinate with each other after 30 minutes or more. Take carton of cherry tomatoes, slice in half and add to the bowl. Cut your red onion in small cubes; add to the bowl. Same with your manchego cheese. {basically cut everything into small cubes except the corn and tomatoes} Stir it all together and voila! Sweet, salty and savory. I like to refrigerate mine so it's cool upon chow time. I made this salad and paired it with grilled pork and quinoa. Enjoy! xo
